Stir Fried Cabbage by @plantcrazii

Via @plantcrazii A dish that will surprisingly blow you away..

If you have never had this before, you'll want to add cabbage to your next grocery list!

It's light in calories so I guess when we add all the saucy ingredients, it's still a healthy dish right?! haha.


730g cabbage

1 tbsp vegetable oil for frying

15g minced fresh ginger

80g thinly sliced sweet peppers/bell peppers

15g diced spring onions

1/2 tsp white sugar

4 smashed garlic cloves

2 1/2 tbsp vegan vegetable stir fry sauce

2 tbsp tamari or soy sauce

1 1/2 tbsp rice vinegar

1/2 tbsp chili oil

salt to taste


Method:

Remove the bottom root piece of the cabbage then cut the cabbage in half.

Remove the middle core piece from both cabbage halves.

Separate the cabbage leaves and rip them into medium size pieces.

Rinse them well, let the pieces sit for 10 minutes in a large bowl filled with salted water then drain.


In a large non-stick skillet, bring the vegetable oil to medium heat.

Sauté the minced ginger and garlic for 2 minutes then add in the sweet peppers and cook for another 1 minute.

Mix in the vegetable stir fry sauce, rice vinegar and sugar then stir until everything is combined.

Add in the spring onions,the cabbage and sauté for 10 minutes or until the cabbage is cooked *Don't overcook as the cabbage needs to still have a crunch to it.

Turn off your heat then mix in the tamari sauce and chili oil.

Serve hot on steamed rice or eat on it's own.
