MA-CAULI-CULKIN WHOLE ROASTED CAULI:


- 1 small romanesco cauli

- 1/2 yellow onion

- 3 green chilies

- 2 cloves garlic

- one handful fresh basil

- kosher salt

- black pepper

- 1/4 cup evoo @caoliveranch


// ROASTED PEPPER SAUCE:

- 1 red pepper

- 1/4 cup vegan cream cheese @tofuttibrands

- 1 tsp white wine vinegar @filippoberio_us

- 1 tsp red pepper flakes

- 2 tbsp evoo

- kosher salt

- black pepper


Chiffonade basil & chopped pistachios for garnish


METHOD:

1. Blend ingredients together for marinade. Pour over cauli. Rub in all over. Cover and marinade for at least an hour. Cover with foil, bake at 350 F for 35-45 mins until slightly tender. Uncover and bake for another 30. Broil 5 minutes at end.


2. Place red pepper over open flame on stove (medium-low flame). Carefully using tongs char all side until almost completely black & pepper is soft. Place in bowl, cover and let sit 5 minutes. Uncover, peel skin & place in blender. Blend with remaining ingredients until smooth.


3. Plate whole roasted cauli with sauce and top with basil & pistachios. Serve with pasta, rice, couscous, pita or on its own!
